Sparkling Apple Pie In A Glass

Fall is one of the best seasons in Missouri. The change in weather, celebrations with friends and family, and spiced wine-tails make this season enjoyable. We took one of our favorite celebration desserts and made it into a wine-tail.

INGREDIENTS

3 oz. Apple Cider

¾ oz. Cinnamon Schnapps

1 tbsp Cinnamon Simple Syrup

3 oz. Sparkling Wine (we used Stone Hill’s Blanc de Blancs)

(optional) Cinnamon Sugar

 

RECIPE

  1. In a small sauce pot, add the water and cinnamon sticks. Bring to a boil.
  2. Simmer for 10 minutes, and remove cinnamon sticks.
  3. Bring cinnamon water back to a boil, add sugar, and stir until sugar is dissolved.
  4. Place cinnamon simple syrup aside.
  5. In a shaker, add ice, apple cider, cinnamon schnapps, and cinnamon simple syrup. Shake until well-chilled.
  6. Use apple to rim glass and dip rim into cinnamon sugar mixture.
  7. Strain mixture into glass.
  8. Top with sparkling wine
  9. Garnish with an apple slice.

 

This cinnamon-forward dessert in a glass is the perfect drink for a cool fall day. Cheers!

Passion Over Everything Baltimore Bend Celebrates 20 Years

“You need to have the passion for agriculture and never lose it because that is what drives the winery,” says Sarah Schmidt, Baltimore Bend Winery Co-Owner.

Passion is certainly what drives Sarah, as her and her co-owners are rapidly approaching 20 years in the wine industry. Sarah says that it is a family business, starting back in 1997 alongside her parents and brother.

“We wanted to start this winery because of our love for the creation of wine itself. We were all wine drinkers and wanted to share what we were growing in the vineyard,” Sarah says. Although they had been growing grapes for several years prior, the tasting room did not open until November 3, 2003.

Baltimore Bend OwnersTheir goal for opening the tasting room was to try out their own craft, bringing together the science of making wine and the creativity of flavors. It was about sharing with customers and the public, Sarah says.

Reflecting back on the past 20 years, Sarah says that their business has evolved greatly. Not only is their physical building different, with the addition of outdoor seating and an updated tasting room; their expansion into the wholesale market has also helped their business grow.

As many winery owners and agriculturists know, the wine industry has certainly not been easy. Sarah says they have had to adjust to changes in weather, as well as the economy. “We are weathering the storm after 20 years, continuing to just keep moving forward,” she says.

With every falling low, there has been an equal rising high for Baltimore Bend Winery. “It has been fun and interesting to see the progression of the wine industry,” Sarah says. “When we got into business 20 years ago, we were the 52nd or 53rd winery in the state. Now, there are more than 128 wineries.”

In addition to co-owning Baltimore Bend, Sarah also serves as a member of the Wine Marketing and Research Council. The Wine Marketing and Research Council is the check-off program with funds going towards research and marketing projects that promote the consumption of Missouri grape and wine products.

While serving, Sarah says she strives to be the voice for smaller wineries. “Baltimore Bend is not a big winery so I think that projects that are brought to the Council for funding, whether it is for marketing or vineyard research, influence my operation differently,” she says. “I try to look at it from the perspective of a mid to smaller winery and if it would be impactful for the entire industry.”

After taking a step back and seeing all that Baltimore Bend Winery has achieved over the past 20 years, Sarah says she is eager to celebrate the winery’s big anniversary. The winery plans to hold events this year on November 10 and 11.

Partnering with Lex-La-Ray Technical Center’s Culinary Arts program, Nov.10 will entail a small plate food and wine pairing. “We wanted to give experience to the students, as well as just give back to the community,” Sarah says.

The celebration will continue into Saturday, Nov. 11, with all day festivities such as live music, a food truck, and plenty of wine, Sarah says. In addition, Baltimore Bend Winery will be releasing a special edition wine release with a special label commemorating 20 years in business.

November 3, 2003 will always hold a special place in Sarah’s heart. It was the day the tasting room opened 20 years ago. A love for agriculture and a passion for wine is what has driven her and her family to achieve all they have for Baltimore Bend Winery.

Apple French 75

The French 75 is a classic in the cocktail world, so we decided to put a twist on it. Meet the new and improved, Apple French 75.

Apple French 75

Ingredients (yields 1 drink)

1 oz. gin

½ oz. apple cider

3 oz. sparkling wine (we used Stone Hill Winery’s Blanc de Blancs)

1 oz. cinnamon simple syrup

(OPTIONAL) Cinnamon sugar mixture

(OPTIONAL) Apple slices

With spice from the cider to the sweetness from the simple syrup, this cocktail is the perfect beverage to transition into fall.

Trolley Transportation for Oktoberfest

Can you believe it is already October? And we all know what happens this month…Oktoberfest!! If you have plans to go or are just starting to make them, we have included some safe ways to travel while enjoying Missouri Wine.

Trolleys are a great way to safely get around wineries and explore wine country. They allow for you to discover local wineries, or enjoy a fun day out with your friends.

Hermann is a secret gem of Missouri, tucked away in the Missouri River Valley. It is a great place to visit during Oktoberfest with numerous wineries, shopping, and places to stay. Hermann Trolley’s travel to seven local wineries. They run Wednesday through Sunday and can accommodate parties of all sizes.

Augusta TrolleyLocated in the heart of the Ozarks, the Getaway Trolley is the perfect way to tour wineries in the St. James area. They run Saturday and Sunday and Monday-Friday by reservation only. It is the best way to experience world-class wines and beautiful vineyards.

Visiting Excelsior Springs for Oktoberfest? The Chamber Trolley is the way to go when touring wineries and exploring Excelsior Springs. They have a variety of tours available, including a Fall Spooks & Spirits Tour and a Wine & Dine Tour.

Augusta is a quaint town to visit for wine tasting. Relax and enjoy a ride on their trolley’s as they take you to four local wineries. Augusta Trolley’s are a great way to explore the town and sip on some delicious Missouri wine. This complimentary wine trolley only runs on Saturday’s during season.

Did you know Ste. Genevieve is the oldest town west of the Mississippi River? This old and authentic town is the perfect place to visit during October. The Ste. Genevieve Trolley allows for a safe trip to the wineries, as well as a great tour of the downtown historic district. There are seven wineries to visit in Ste. Genevieve.

Excelsior SpringsNo matter where you visit during Oktoberfest, always make sure you are traveling safely! Trolleys are a great way to have fun and visit local wineries. Experience all that they offer next time you are in Missouri wine country.

Traminette Peach Strawberry Popsicles

It may be the beginning of fall, but it is hot outside in Missouri. Cool off with these refreshing and fruity popsicles.

INGREDIENTS

2 Large White Peaches

5 Strawberries

2 Tbsp of Honey

½ C. Traminette (or sub any MO White Wine)

1 Tbsp of Lemon Juice

DIRECTIONS

  1. Remove the stones from the peaches leaving the skin on, slice them into large pieces, and put them in a blender.
  2. Cut the strawberry stems off and add to the blender.
  3. Add the Traminette, lemon juice, and honey.
  4. Blend until smooth. Taste and adjust seasonings or add a little more sweetener if you prefer.
  5. Pour into 4 large popsicle molds and freeze

Not-so-sweet with a twist of Traminette – this is a recipe you do not want to skip!

DI-Wine Bottle Dispenser

Want a new kitchen gadget utilizing wine bottles? Check out the DI-Wine Bottle Dispenser.

Supplies:

  • 1 Wine Bottle
  • 1 Stopper Spout
  • Olive Oil or Dish Soap

Directions:

1. Enjoy a bottle of your favorite Missouri wine with your friends!

2. Rinse your bottle with dish soap and hot water.

3. Remove the wine label and allow the bottle to dry! This can be a fairly tedious step, but we did the work for you! Here are the 3 easiest ways to remove a wine label:

  • Use baking soda:
    • Add 5-10 tablespoons of baking soda to a bucket of warm water
    • Soak the bottle in the mixture for 30 minutes
    • Use a utility blade to gently remove the label
  • Use steamer:
    • Fill the steamer with water and turn it on
    • Hold the bottle over the steam to loosen the adhesive 
    • Use a utility blade to remove adhesive from the bottle
  • Use OxiClean:
    • Fill the bucket with water and 1/4 cup of OxiClean
    • Submerge the wine bottle in the mixture 
    • Soak up to 8 hours
    • Use a utility blade to remove the wine label and adhesive 

4. Fill the clean bottle with your choice of dish soap, olive oil, or anything else you frequently use in the kitchen!

5. Put a spout into the neck of the bottle.

6. (OPTIONAL) Paint your wine bottle dispenser to match your kitchen décor and coat it with Mod Podge!

Down, set, hut. It’s officially football season and we are kicking off with all you need to celebrate when your team is on the road. Hosting a fun celebration to watch your team play an away game is the perfect opportunity to try new recipes, make fun wine tails, and pair delicious snacks with wine!

We all know here in Missouri, we love football. Well, football and of course wine too. But even more than football and wine, we love food! Hosting a football season soiree is a great time to try out new recipes and feed a crowd. We have gathered three recipes for you to serve at your next football function: Catawba Pulled Pork, White Wine Carnitas, and Vidal Blanc Chicken & Cheese Dip.

DI-Wine-Bottlecap Serving Tray

When it comes to crafting, corks seem to get all the hype, but what if your favorite Missouri wine has a screw top? Don’t toss those metal caps in the trash just yet, because there are many creative ways to use them as well. One of our favorite screw cap projects is a bottlecap serving tray, which is a beautiful way to showcase some of your favorite Missouri wines while entertaining friends and family. Bottlecaps

WHAT YOU WILL NEED

-           Several old screw-top wine bottlecaps (we used 99)

-           A wooden serving tray at least 1 inch deep (ours was 16-by-12-inch)

-           16 ounces of resin (more if using a bigger tray)

-           A rolling pin or rubber mallet

-           A hot-glue gun and extra glue sticks

-           Disposable tablecloth or old newspapers

-           Cling wrap

-           Heat gun or torch

STEP-BY-STEP

Step 1: After selecting your wooden tray (and finishing or painting it if you so desire), carefully arrange the bottle caps in the bottom. You can randomly place the caps for a fun and cheerful look, create a repeating pattern or even make a mosaic-like design, such as grapes.

Step 2: Once you have selected and arranged your chosen caps, you must carefully flatten each one. The resin dries best when it is about an 1/8-inch thick, so leaving the caps at their full height can create curing problems with your project. We found it relatively easy to either roll the caps flat with a sturdy rolling pin or simply squash them flat with a rubber mallet. Of course, be conscientious of the surface you’re flattening the caps on and put down a town, cutting board or other protection if needed.

Resin poured over bottle capsStep 3: Place the now flattened caps back in your tray to check the fit once more. While the flat caps do not take up too much more room, they may somewhat shift your design.

Step 4: Once you’re satisfied with the design of the flattened caps, carefully hot glue them to the tray one by one until they are all securely fastened. While this step may seem tedious, it is necessary. Failing to attach the caps before pouring your resin may result in the design shifting during the next step.

Step 5: Carefully mix the resin according to the instructions and follow any safety precautions suggested. Place your tray onto an old newspaper or a disposable tablecloth, and slowly pour the prepared resin over the bottom of the tray. Spread out the resin using a disposable utensil or a large popsicle stick before carefully applying a heat gun to any bubbles.

Step 6: Cover the top of the tray with cling wrap to ensure no dust, debris, etc., sticks to the resin as it cures.

Step 8: Use your new tray to carry your favorite Missouri wine, glasses and snacks the next time you entertain.
